Pink Lemonade Crepes

Since we have been watching the Tour de France, why not continue with the French theme and celebrate Bastille Day!  Bastille Day is similar to the 4th of July in the United States.  Parades and fireworks fill the day.  So, today I have a fun spin on the traditional French crepe.



Crepes are made with very simple ingredients and these Pink Lemonade Crepes are no different.
Same ingredients with the addition of some pink lemonade drink mix.  Each crepe has that pink lemonade flavor and you'll love it with some fruit.




I won't lie to you.  Flipping crepes is hard and the first one is usually a sacrificial one.  But, once you get going, it isn't too hard.  Just keeping it real...but Pink Lemonade Crepes are worth it!


Ingredients to make 4:
1/2 cup flour
4 Tbsp pink lemonade drink mix
dash of salt
3/4 cup milk
2 eggs
2 Tbsp butter
powdered sugar, strawberries and lemon pieces
Directions:
In a blender, mix flour, pink lemonade drink mix, salt, milk and eggs until well incorporated.  Once that is complete, add butter 1/2 Tbsp per crepe to a nonstick 12" skillet.  Melt over medium heat.  Pour 1/3 cup of batter onto the melted butter.  Tilt pan until crepe mixture has spread across surface.  Cook for 2-3 minutes before carefully flipping.  Cook then for an addition 1-2 minutes.  Remove and fold into a triangle.  Dust with powdered sugar and top with strawberries and pieces of lemon.  Serve immediately.


A fun summer dessert with a little twist!
